Descent 2, playing that with my  Logitech cyborg 3D mouse (and then spacetec spaceorb) kept me occupied for hours.
I loved how noone online could beat me with a keyboard and standard mouse. If they had a 3d mouse too, I was toast.
Doom
Quake
simcity 2000/4
I think Oblivion finally tops out at my favorite game ever. GTA is close though.

I have looked at some of the popcap games thinking they would be fun on my tablet, but they all seem to require more than the 8MB of video ram the 01+ has :-(

TES Series, especially Daggerfall (I tried Arena on my oqo and it didn't run very smoothly, so I'm guessing its the same for this Sad)
GTA IV
Battlefield Bad Company
Mortal Kombat Series
Almost every Nintendo and Sega game
Too many more to list...

I'm a huge retro games fan.  Got a fair few emulators on my oQo, hook up a small joypad to the USB and play a fair few games.

Tons of great arcade games on MAME, in the UK the Sinclair Spectrum (rival to the Commodore C64) i loved as i played games on that for years and still do on an emulator.

Also got Half Life I working on the oQo so i tend to play a fair bit of that.  Classic game, of course Doom and Quake II were legendary (Have those on it also !)

Retro gamings huge at the moment, the latest consoles allow you to download old classics.  Theres a retro gaming mag in the UK called 'surprise' Retro Gamer.  Forums are full of people talking about the old games.

Its amazing that back in the day a game would cost you say 8 pounds, now in a split second you can download any of these games from the 80's and play them on an emulator.

To truly answer this question would take far too much time...

Some of my favorites though:

Wizardry 7 : Crusaders of the Dark Savant (Probably one of the best RPGs ever made)
Elder Scrolls 3 : Morrowind (loved for it's non linear, and huge totally explore-able world)
Gameboy Excitebike clone - Like the orginal, but better with loops and nitros
Dragon Warrior NES - My first RPG of sorts, simple game play and story but awesome for the time.

Current Stuff:
Fallout 3
Star Wars Galaxies - Before it was nerfed to oblivian. When it first came out, it was a very good complex game. Now it's another WoW wanna be. (over simplified and immature, catered to young players with ADD and potty mouths when their parents aren't looking)
Eve-Online - by far the best MMO out right now, complexity, depth, and a mature player base equals a win, plus non-concentual pvp, and unlimited character growth.
Guitar Hero (all versions) - Really innovative game play, and very very fun to play.
Bionic Commando Remake - Way awesome NES game, that has be remade for the PC, and Xbox live I think. Haven't been able to get anything more than a demo, as it's not sold in Germany. Need to proxy up and get it.

To be honest the history of gaming has released so many amazing games, it would be hard to call one my all time favorite. But if I had too, it would probably be Wizardy 7. Even today that game captured an atmosphere, and went way beyond what any game had done for the genre at the time.
